Cool Foods has been really enhanced by the addition of our fabulous and exclusive Smoked Fish and Eel Range from Coopers Beach, Northland. The Kina Pate is sensational for dips or butter sauces for your fish dishes. For further details, go to our new products section of the newsletter. Great smokey flavour, very moist, and all from New Zealand waters. Sky City's Observatory Restaurant have the Range on their menu; and many of our chefs are going to add it to their new menus starting in February. Any other chilled or frozen products you would like us to consider stocking, please again email Claire.
Yes, business has been difficult, although Skellonz has not laid anyone off and has also employed three new people during this time. We are all looking foward to 2009, although we all must continue to operate carefully, efficiently and lift our game even more to stay ahead.
Skellonz is continuously working hard to find and bring you better pricing, better quality and a more interesting range so we can continue to offer products that will enhance your menus.
SPORTS NEWS:- I enjoyed the All Blacks Grand Slam - no tries against, except Munster - what does that tell us about Rugby in Great Britian! Now looking forward to a Summer of cricket, weather permitting. My local club hockey side won The North Harbour Masters competition this year 2-0 in this years final. Yes, still playing at my age - I know I should be sitting in my armchair watching Tele!! Anyway, Liverpool for the Cup?? Maybe this year.

Smoked Seafood
A new range for Skellon Foods by Apatu Aqua Enterprises. All these products are harvested and ice packed. They are then smoked and chilled overnight to enhance flavour, before being processed using a "2 hour policy" which ensures products maintain optimum freshness.
Smoked Salmon - Moist, full flavour New Zealand salmon smoked in small batches.
Smoked Eel - Harvested from our Northland streams and rivers, manuka smoked and vacuum packed at our premises in Coopers Beach.
Smoked Fish - The fish is caught by a local fisherman working two boats, which ensures we have fresh fish whenever possible. The fish is smoked using manuka, giving it a natural smoke flavour.
Smoked Pate - Harvested by Apatu Aqua's own divers from the clean Northland coastal waters, the kina roe is known for it's sweet, fresh flavours. The kina pate has a great flavour on its own, but can be used as a enhancer for your sauces. Also available - smoked eel pate.

Full Fruit Sorbets
Fresh, seasonal fruit sorbets are now available. The guys at Zest have just launched their range of sorbets for the Summer.
All Zest's sorbets are made straight from the fruit - no artificial flavours or citric acid here, just fruit at it's prime encapsulated in a refreshing sorbet.
Perfect for a "Seasonal Fruit Sorbet Trio" or special palate cleanser. Available while in season are the Fresh Strawberry, Fresh Peach and Fresh Nectarine sorbets. Other flavours include Passionfruit, Mango, Raspberry, Feijoa and Lemon.

Fruit Finishing Vinegars
This range from Nicholson Fine Foods are hand made in small batches from fine quality Australian fruits. They are designed to be used at the end of the cooking process to glaze, dress, garnish flavour, harmonise and finish a dish.
Flavour range includes:
Italian Style Sweet Black Cherry - sublime cherry flavours, slightly thick with delicious balance between acid and sugar. Use with duck, lamb, Wagu beef, sharp and salty cheeses like fetta, gorgonzola and goat's cheese. Wonderful with salads and fresh summer fruits.
Blood Plum - Bold fresh blood plum flavours with a unique freshness that combines with spice. Similar uses to the Cherry vinegar.
Summer Mango - This vinegar shows all the vibrant flavours of summer mangos. Subtle use of ginger in processing adds a complexity that delights the palate. Use with seafood including salmon, prawns and white fillets. Also works well with smoked and roasted meats including ham, pork, chicken and turkey.
Wild Hibiscus Flower - Unique and complex summer fruit profile showing the flavours of plum, raspberry, watermelon and rhubarb. Use with oysters, salmon, spicy food including chicken and prawns.

Smoked Eel Fritters with Wasabi Mayonnaise
INGREDIENTS
250g Smoked Eel
75g Self Raising Flour
50ml Milk
1 Egg
50g Finely Diced Onion (sautéed off)
5g Just Chilli Paste (sautéed off)
5g Sea Salt
Pinch of Chopped Parsley
Pinch of Chopped Dill
METHOD
1. Break up Eel into small pieces;
2. Mix egg and flour together to form a smooth paste,
add milk and whisk until no lumps;
3. Add remaining ingredients and adjust seasoning and
consistency to preference;
4. Cook off fritters and serve with nice crisp apple salad
and wasabi mayonnaise.
Eel, Just Chilli Paste and Wasabi Mayonnaise are all available from Skellon Foods.
(NB: Just Chilli Paste is flavoursome, but not overly hot)

CHRISTMAS BREAK
Yes, we will be here (or at least some of us)! The only days Skellonz will be closed for business are the Stat days of Christmas and New Year weeks (and of course the usual weekends). Please take care over the Christmas period wherever you may be, have patience on the roads and we look forward to seeing you all in 2009 - Merry Christmas & Happy New Year.
